Already changed water pump and thermostat . Needle still shows that it overheats over time and motor isn't even hot. Any help?

This engine has a temperature sensor that your ECM uses and a coolant temperature sensor for the gauge,this one is located between cylinders 2 and 4, The one for the ECM is above sparkplug number 1 . Check and inspect the coolant temperature sensor that is between 2 and 4.
