I just pulled a bad motor out of a 2006 f350 6.0 and replaced it with another 6.0 P/S and after 2 weeks of use it became hard to start I used the old glow plugs since they were good and changed the fuel filters that I put in at the time of motor swap they were horrible but it's deleted and studded w/o a programmer so it also throws egr codes and now the P0197 EOT code I'm trying to figure out if that sensor could cause the hard long start issue

P0197 Engine Oil Temperature (EOT) circuit low input

Yes it will , circuit low condition are shorted circuits whether its internal or external, the signal return for the EOT is also inline with the engine coolant temperature sensor, and manifold air temperature. If the EOT is setting low you can be sure  the engine coolant temperature is reading wrong and so is the air intake,
