The sensor next to the oil filter is broke off with a wire hanging next to it was curious to see what sensor that would be

Vehicle: 2012 Nissan Altima sr 3.5l v6

The sensor is the Oil Pressure Switch

That is what I thought, it only has one wire that connects to it. I wonder why it's not giving a code being it's broken and not hooked up.

That sensor will not set a code. The circuit will ground the wire only if the engine runs out of oil. If the wire is disconnected, you will never get a warning that the engine is out of oil. Not a great circuit design from my point of view, but that's what it is.
