what is the normal coolant temperature for the engine bmw 535i xdrive 2009

The normal temperature range even for the BMW is 210 degrees F. When it comes to the BMW always be careful and add  the appropriate amount of coolant to water ratio or you will set a P0128, where this is a MAP thermostat regulating temperature.. If the cooling system is poor  take a look at the clutch cooling fan when its start loosing its oil , it effectiviness fopr cooling is gone

I did the water pump change the temperature is kept at 216f until the more I arrived it is 219f the fan turns on at 217f and down to 216 again there is something wrong or it is normal or I have to change the thermostat

No that fine, its 225 F is when there a problem and will cause headgasket problem. The thermostat okay , take a look cooling fan clutch (if this one has it) when the its oil seeps out it will collect a bunch of dirt dust, and it easlity get pass as no prolem

That temperature is fine, If you want to buy a thermostat it comes in degrees there a 207 F and there is a 217 F . You have a normal temperature setting. You can look up Motorad 828217. this is a thermostat which is standard, Being a 217 F it means it will open at 217 F which yours does.If you do not feel comfortabl with your thermostat you can get a 207 F which means it opens at 207F. Standard for BMW is a 217 F
