Diesel engine boils excessively even when verified water is circulating, why?

Nissan 3:0 double cab 2007, 20km is too far then I have to stop, wait for engin to cool off then top up water (usually about 2liters).
The resevoir does not have cap and contributes to water loss.

Vehicle: 2007, Nissan, hardbody 3:0 diesel
