On a 2002 Ford Mustang how do I fix a P1285 code?

The motor is not overheating and temp gauge is reading normal temp

With no symptoms or a problem with the temp, I would first check the coolant level and make sure that it's full. If it is, then I would replace the sensor. Here is some more info for you
