Getting P0103 referring to Thermostat temp high or something in that line, replaced the Themostat and the error continues, what else could it be.

This code is actually a code for a faulty mass air flow sensor. Replacing the thermostat won't do anything to resolve the issue. In most cases the mass air flow sensor itself is the issue.
