How dangerous is a EVAP system leak? Is it hazardous to your health because of the fumes?

As a general rule this is not dangerous to you. It's dangerous to the atmosphere. It is allowing the fuel vapors into the air. Since most often this is do to an external part on the car, this will not cause you harm inside the vehicle.
