I pulled the following codes...

P0404 Exhaust Gas Recirculation Circuit Range/Performance
P0463 Fuel Level Sensor Circuit High Input
P1404 IAT - B Circuit Malfunction/ Exhaust Gas Recirculation Closed Position Performance
P1602 Lost Communications With Brake/Traction Control (EBTCM) System
P1811 Maximum adapt and long shift (will not set the SES light and not all code readers will see this code)

Could the EGR codes indicate problems that could lead to the engine stalling while driving?

Vehicle: 2000 Pontiave Bonneville 3.8L v6

P0404 EGR commanded open but does not

P0463 Fuel level circuit, EVAP operation uses this

P1404 EGR commanded closed but is still open

P1602 ABS code

P1811 controled shift time (transmission)

While the vehicle is acclerating the EGR opens as you come to a stop or idle the EGR should close, if it stays open the engine rough idles and even stall at idle not while driving, at certain driving condition the EGR should be open. While driving the EGR would not make the engine stall, Low fuel pressure will cause the engine to stall.the fuel pressure specification should be at 48-55 psi.The next will be a faulty MAF (mass air flow).Because you have a EGR that is stuck open and sometimes stuck closed, it would be a good idea to check for a plugged exhaust by using a vacuum gauge.
