1999 Chevrolet Tahoe code P0122. Why does the car turn off when it reaches a high temperature? the temperature reaches 210 and it turns off when I have my A/C on?

The P0122 may have nothing to do with the engine turning off when it reaches a high temperature. You should check for more codes. How are you checking the engine temperature? it's possible that the reason the engine is turning off is because the engine is overheating, and the gauge is faulty.
