P1039 02 sensor circuit slow response Bank 1 Sensor 2

P0140 02 sesnor circuit no activity Bank 1 Sensor 2

P0141 02 sensor heater circuit Bank 1 Sensor 2

A scan tool that has a graph reading would be good, To begin with to get all these code there is a connection problem with the 02 sensor . To main problem when dealing with this code condition is VW had a trouble with the 02 sensor , That VW had to do a Recall on the ECM software.Being a 2000 year vehicle it not warranty anymore that where getting a scan tool to look at where the problem becomes helpful. And since you did install a Bosch 02 sensor which is good , there are different part for the VW Jetta. the rear 02 sensor is part number 06A906262F.make sure that the Bosh is compatible to this part number . and this is a very pricey 02 sensor.

Here is a rear 02 sensor with a scan graphing tool that inexpensive it determines that this 02 sensor is no longer valid

Here the 02 sensor that was replaced this is a good downstream 02 sensor.
