I replaced the anti-freeze and the check engine light turned on along with 'P1116'. I'm not sure if the car might have an air bubble and I need to remove it. If so, is there a place in the motor where I can remove it?

Vehicle: 2007, Mercury, Millan, 2.3

P1116 Engine coolant temperature sensor out of self rang test.

Use the upper radiator hose, Fill it until coolant leaks out, What p1116 means you ran a key on engine running  test with the vehicle not warmed up. If you are sure you warmed it up properly then you may have a overheating condition
