The P0431 code is for the Catalytic converter. The Catalytic Converter won't cause the engine to stall unless is totally damage. If that is the case, then you have to replace the Catalytic Converter. The only way to know if is damage, is by removing the visually inspecting the Catalytic Converter.

You are correct the Oxygen Sensor is the most common problem. You probably have to replace both sensors, but you could start with the front sensor. The spark plugs shouldn't trigger neither of the codes, but if you haven't replace the plugs lately, then is not a bad idea to replace them.

I have a 2007 Mitsubishi Eclipse. My service engine soon light came on and when I had the code checked it was P0431. The car runs with fine, no sluggishness or rough idling. The light was on for a day or two and now went off. I am thinking a sensor. I was told to put in some catalytic cleaner in the gas tank and see if that helps. But now that the light went off, would that be necessary? My understanding is if it was the catalytic convertor the car would be losing gas mileage and running rough, but it isn't. What are you thinking?
