All sensors have a 5volt reference and send back a voltage from .01 to 4 colts depending on maker of the car. Now the throttle should climb 1 number at a time as you slowly press the gas peddle. ANY sudden change whether its up or down when your expect only a single digit increase raises questions to that sensor. When it comes to a performance issues it's a hard thing to track down. Cause it has to be present in order to fix it. There is a thing called "Freeze Frame" in the scan tool where it take a snap shot of engine rpm, throttle position, speed of car and temp. This does help with pin pointing said problem.
Since the crank sensor was just changed I would start with the gapping of this sensor to the plate on the pulley. A incorrect gapping will make it run funny since its not getting a true reading.
